Many states now allow for the sale and purchase of raw milk commercially, but in Ohio, raw milk can only be consumed from a cow that the owner owns. By investing in a "Herdshare," one can become a part owner of a cow herd and have access to the milk they produce. To purchase raw milk, one must first buy into the farmer's herd and sign a contract. The "per gallon" fees are accounted for herd management/boarding, bottling, handling, etc., rather than for milk itself.
